Description

A creamy and nutritious Vanilla Chia Pudding made with chia seeds soaked in plant-based milk, naturally sweetened with maple syrup and flavored with vanilla extract. Perfect for a healthy breakfast or snack, topped with fresh fruits or your favorite toppings.

Ingredients

Chia Pudding Base

  • ½ cup chia seeds
  • 2 cups plant-based milk
  • 1 Tablespoon maple syrup, honey or sweetener of choice
  • ½ Tablespoon vanilla extract (or vanilla bean paste)

Toppings (Optional)

  • Fresh berries or other fruit
  • Granola
  • Nut butter

Instructions

  1. Mix: In a bowl or mason jar, stir together chia seeds, plant-based milk, maple syrup, and vanilla extract. If using a mason jar, secure the lid and shake vigorously to combine thoroughly.
  2. Set: Let the mixture sit for 5 minutes, then stir or shake again to break up any clumps of chia seeds. Cover and refrigerate for 1 to 2 hours or overnight to allow the pudding to thicken and set.
  3. Serve: Once thick and creamy, serve the chia pudding topped with fresh berries, fruit, granola, or nut butter as desired. If the pudding is too thin, add an additional tablespoon of chia seeds, stir well, and refrigerate for another 30 minutes.
  4. Store: Keep leftover pudding in a covered container in the refrigerator for 5 to 7 days for optimal freshness.

Notes

  • For best results, use unsweetened plant-based milk like almond, oat, or coconut milk.
  • Adjust sweetness to taste with maple syrup, honey, or your preferred sweetener.
  • Vanilla bean paste can be used instead of extract for a more intense vanilla flavor.
  • Make the pudding the night before for a ready-to-eat breakfast in the morning.
  • Try experimenting with different toppings such as nuts, seeds, or shredded coconut.
