Ingredients
Tofu Filling
- 3 tablespoons olive oil
- 16 ounces extra firm tofu (pressed to remove excess liquid)
- 2 tablespoons taco seasoning (add about 1 teaspoon salt if unsalted)
- 2 chipotle peppers, minced
- 1/3 to 1/2 cup salsa
Cashew Queso
- 1 cup cashews
- 1/2 cup water
- 1 can diced green chiles (or less, to taste)
- 1 teaspoon taco seasoning (add a pinch of salt if unsalted)
Assembly and Extras
- Huge burrito-sized flour tortillas
- Something crunchy: tostadas or tortilla chips
- Roasted vegetables (optional)
- Black beans (optional)
- Avocados (optional)
- Fresh items: tomatoes, cabbage slaw, lettuce, cilantro
- Salsa (extra for serving)
Instructions
- Prepare the Sofritas Tofu: Heat 3 tablespoons of olive oil over medium-high heat in a large nonstick skillet. Crumble the pressed tofu into the skillet, breaking it apart as you cook. Add 2 tablespoons of taco seasoning, the minced chipotle peppers, salsa (between 1/3 to 1/2 cup), and salt if your seasoning lacks salt. Cook on high heat, stirring initially until combined, then let everything cook without stirring for about 10 minutes, adding a bit of oil if sticking, to develop browned, slightly crunchy pieces.
- Make the Cashew Queso: In a blender, combine 1 cup cashews, 1/2 cup water, 1 can diced green chiles (adjust quantity to taste), 1 teaspoon taco seasoning, and salt if needed. Blend aggressively until the queso is completely smooth and creamy.
- Assemble the Crunchwrap: Lay a large flour tortilla flat on a clean surface. Layer the cooked sofritas tofu mixture in the center, spread a generous amount of cashew queso over it, add your choice of crispy elements such as tostadas or tortilla chips, followed by any optional roasted vegetables, black beans, fresh vegetables, avocado slices, and additional salsa.
- Fold and Cook: Fold the edges of the tortilla inward toward the center to create a sealed wrap. Heat a hot oiled skillet over medium heat. Place the wrapped tortilla seam side down in the skillet. Cook for a few minutes on each side until the tortilla exterior is firm, golden brown, and crispy.
- Serve: Remove the crunchwrap from the skillet, cut into portions, and serve immediately with extra salsa or preferred toppings.
Notes
- Pressing the tofu well before cooking is crucial to achieve the desired crispy texture.
- The cashew queso can be stored in the refrigerator for up to 3 days in an airtight container.
- Customize the fillings according to your preferences – add more veggies or beans to make it heartier.
- For a gluten-free version, substitute the flour tortillas with gluten-free large tortillas.
- Chipotle peppers add smoky heat; adjust quantity based on preferred spice level.
