Description

These Vegan Garlic Noodles are a quick and flavorful plant-based dish, perfect for a 15-minute dinner packed with garlic, green onions, and a creamy coconut milk sauce. This recipe uses simple ingredients to create a deliciously savory meal that’s both comforting and easy to prepare.

Ingredients

Vegan Garlic Noodles Ingredients

  • 8 oz pasta of choice (gluten-free or regular)
  • 1 small head garlic, minced or thinly sliced cloves (adjust to taste)
  • 1/2 bunch green onions, sliced (separate white and green parts)
  • 1/2 cup canned coconut milk
  • 3 tbsp reduced sodium tamari or soy sauce (use no-soy alternative if preferred)
  • 1 tsp hoisin sauce (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of water to a boil on the stove and cook your chosen pasta according to package instructions until al dente. Drain the pasta and set aside in the pot while you prepare the sauce.
  2. Prep Garlic and Onion: While the pasta cooks, mince or thinly slice the garlic cloves. Slice the green onions, keeping the white parts separate from the green parts for different levels of cooking.
  3. Cook the Garlic and Onion: Heat a large skillet over medium-high heat without oil for about one minute. Add the minced garlic with a tablespoon of water and stir. If the garlic starts sticking, add a little more water. Cook until the garlic is very fragrant, about 1 to 2 minutes. Add the white parts of the green onion along with a tablespoon of water if needed. Sauté for 3 minutes, stirring frequently and adding water as necessary to prevent sticking.
  4. Put It All Together: Pour in the coconut milk and tamari or soy sauce into the skillet. Stir well and heat for one minute to combine the flavors. Then add the green parts of the onion and stir again. Finally, add the cooked pasta to the skillet and toss thoroughly with tongs or forks to evenly coat the noodles in the sauce.
  5. Serve: Serve the noodles hot. Optional garnishes include vegan Parmesan, chili flakes, and extra green onion for added flavor and color.
  6. Store: This dish is best enjoyed fresh on the first night. If you have leftovers, store them in an airtight container in the refrigerator for up to 5 days. When reheating, add a small amount of coconut milk or water to loosen the sauce.

Notes

  • You can use any type of pasta you prefer, including gluten-free options to suit your dietary needs.
  • Adjust the amount of garlic according to your taste preference for more or less pungency.
  • If avoiding soy, substitute tamari or soy sauce with a no-soy alternative like coconut aminos.
  • Adding a teaspoon of hoisin sauce is optional but adds a nice depth of flavor.
  • Reheat gently with added liquid to prevent the noodles from drying out.
  • Garnishing with vegan Parmesan and chili flakes adds extra flavor but can be omitted for a simpler dish.
