Ingredients
Eggs
- 4 eggs
Sauce
- 1 tablespoon unsalted butter
- 1 tablespoon garlic, minced
- 1½ teaspoons Old Bay seasoning
- 1 teaspoon sugar
- ¼ heaping teaspoon onion powder
- 1 teaspoon lemon pepper seasoning
- ¾ teaspoon paprika
- ½ teaspoon red chili flakes, or to taste
- 2/3 cup chicken bone or vegetable broth, low sodium
- 1 tablespoon lemon juice
- Kosher salt, optional
- Parsley, chopped, for garnish
Instructions
- Create an ice bath: Fill a bowl with cold water and ice, then set it aside. This will stop the eggs from cooking after boiling and make peeling easier.
- Boil the eggs: In a medium saucepan, bring enough water to a rolling boil to fully cover the eggs. Gently lower the eggs into the boiling water and cook for 7 minutes for runny yolks or 7½ minutes for slightly firmer yolks.
- Cool and peel the eggs: Immediately transfer the cooked eggs to the prepared ice bath and let them sit for about 2 minutes until cool enough to handle. Peel the eggs under slow running water and pat them dry with paper towels. Set aside.
- Melt butter and cook garlic: In a large skillet over low heat, melt the butter carefully to avoid clarifying it. Add the minced garlic and cook, stirring for 1 minute until fragrant.
- Add seasonings and reduce sauce: Stir in Old Bay seasoning, sugar, onion powder, lemon pepper, paprika, and red chili flakes. Cook for another minute, then pour in the broth. Increase heat to medium-high and cook for about 6 minutes, allowing the sauce to reduce and thicken slightly.
- Finish the sauce: Add the lemon juice and a splash of water to the sauce, stir well to combine. Taste and add kosher salt only if needed, as the seasonings already contain salt.
- Serve: Place the peeled eggs in a serving bowl, pour the Cajun sauce over them, and garnish with chopped parsley. Enjoy as is or with crusty ciabatta bread or jasmine rice for a more filling meal.
Notes
- Adjust red chili flakes according to your preferred spice level.
- Using low sodium broth will allow better control over the saltiness of the dish.
- For firmer yolks, cook eggs closer to 7½ minutes; for runnier yolks, stick to 7 minutes.
- Peeling eggs under running water helps remove the shell more easily.
- Serve immediately for best flavor and texture.
