Ingredients
Filling
- 3 cups cooked, shredded beef, chicken, or steak
- 1 can black or pinto beans, drained and rinsed
- 1 1/2 cups Mexican rice (or cilantro lime, white, or brown rice)
- 2 cups shredded mozzarella cheese, divided (or your favorite kind)
- Other optional fillings: sautéed bell pepper and onion, roasted corn, shredded cabbage
Assembly
- 5 large (burrito size) flour tortillas
Toppings
- 2 cups red or green enchilada sauce
- Sour cream, for serving
- Guacamole, for serving
- Pico de gallo or salsa, for serving
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly spray it with cooking spray to prevent sticking.
- Assemble Burritos: Lay out each large flour tortilla. Add a generous handful of your shredded meat, beans, rice, and a portion of cheese onto each tortilla. Fill them sufficiently but ensure you can still roll them closed. Roll the tortillas tightly, folding in the ends, and place seam-side down on the prepared baking sheet.
- Bake Burritos: Place the baking sheet into the preheated oven and bake the burritos for 20 minutes or until they're heated through and the tortillas start to become lightly golden.
- Heat Sauce and Top Burritos: While burritos bake, warm the enchilada sauce in a saucepan over medium heat or microwave until hot. Remove the burritos from the oven and spoon the warmed enchilada sauce generously over each one. Sprinkle the remaining cheese on top.
- Melt Cheese: Return the baking sheet to the oven and bake for a few more minutes, just until the cheese melts and bubbles.
- Serve: Serve the wet burritos hot, topped with sour cream, guacamole, and pico de gallo or your preferred salsa for a fresh, flavorful finish.
